Today I made the best sandwich bread. I have been experimenting with different recipes since purchasing my bread machine. I have tried recipes that came with the bread machine as well as some that are online. Most have been good, but a little on the dry side. Today I adapted a recipe from the Zojirushi book that came the bread machine. I used a basic half wheat and half white flour recipe. I decided to add potatoes to try to make the texture of the bread softer. It worked wonderfully. The bread is delicious.
I made sandwiches with the bread for dinner tonight. I made pannini sandwiches with Tofurky Smoked Turkey flavor with lettuce, tomato, onions and pickles. And I used my favorite mayonnaise which is Spectrum Light Canola Mayonnaise. I will try to freeze the rest of the loaf and will let you know if the texture is still the same after it thaws.
Potato Bread for Zojirushi 2lb Bread Machine
1 1/2 cu water
2 2/3 cup bread flour
2 cups whole wheat flour
2 Tbsps agave
1 1/2 tsps salt
1 cup potatoes, cooked and mashed
1/2 stick of Earth Balance
2 Tbsps vital wheat gluten
1 1/2 tsps rapid rise yeast
Place all ingredients into bread machine with flour last and on top. Make a well in the center of the flour for the yeast. Put yeast in the well created in the flour.
Put bread machine on quick wheat cycle. Bread will be finished in 2:08 hours.
