Sunday-Gardein Crispy Tender Wrap

The plan this weekend was to work on our greenhouse, but plans change.  Between cleaning house, doing laundry and cooking dinners we did not have time to work on it.  Next weekend we will work on it, for sure.  We have enlisted the help of a knowledgeable neighbor to help with the roof pitch.  Although we know what we want to pitch to be, it is a bit of a challenge to cut the rafters to the proper angle.  I have confidence that we will finish this project in the next few weeks.

Dinner tonight was a wrap.  I used Gardein Crispy Tenders and wrapped them up with a bunch of veggies.  I made a spicy and sweet sauce with Sriracha, preserves and vegan mayonnaise.  At Costco, we found whole wheat wraps.  They look like a tortilla, but are an oblong shape.  They hold in all of the toppings nicely.  The are called Flatout Flatbread.  They are soft and flexible with a nice flavor.

Wraps are so nice because you can use your favorite veggies.  It is a great way to clear out the refrigerator if you have a lot of leftover veggies from during the week.  I used lettuce, cucumber, carrots, tomatoes, onion and cilantro.  Cheese would be a good choice too, as would bell peppers.  The variations are endless.  The sauce would be nice for dipping.

 

Sweet and Spicy Sauce

1 tablespoon Earth Balance Mayo, or your favorite vegan mayo

1 teaspoon Sriracha sauce

2 teaspoons blackberry jam

Mix all ingredients.  Use as a dipping sauce or sauce for a wrap or sandwich.

Yum! Love those Gardein crispy tenders, haven’t tried them in a wrap though. I’ll have to keep an eye out for those flatbreads from Costco, they sound great. :-)
