I have made shiitake bacon before, but just using salt and pepper for seasoning. I decided to get a little creative.
This is the second time in a week that I have had a “bacon”, lettuce and tomato sandwich. I first learned that when shiitake mushrooms are baked they take on a bacon-like taste, when Biz Stone was on Martha Stewart’s show. He made Seitan Bourginion and topped it with shiitake bacon. The recipe for Seitan Bourguionon is here. And the recipe for the shiitake bacon I used in this sandwich is below.
1 pound shiitake mushrooms, thinly sliced
1 tablespoon tamari
1 tablespoon canola oil
1 tablespoon maple syrup
1 teaspoon sesame oil
1 teaspoon liquid smoke
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
In a large bowl, combine all ingredients except for mushrooms. Stir well.
Add mushrooms and toss until coated. Set aside to marinate for 30 minutes.
Preheat oven to 350 F.
Spread mushrooms in a glass baking pan in a single layer. I used a 13″X9″ pan. Bake for 30 minutes or until the mushrooms are lightly browned and crisp.
