About Me
I was a vegetarian for two years before I became vegan in January of 2010. I live near Austin, TX with my non-vegan husband, our French Bulldog, Siberian Husky, two parrots and a variety of saltwater fish. I love to cook, but I especially love baking. I am a runner and have run several marathons. I love to run and enjoy reading anything related to Health/Fitness. In my spare time, I enjoy traveling, photography and reading.
I started this blog to document my 21 Day Vegan Kickstart. This program is through PCRM-Physicians Committee for Responsible Medicine. They sponsor this program throughout the year. It is a great program since it provides recipes and information about becoming vegan.
I began the 21 day vegan kickstart on January 1, 2010. I think what they say about it takes three weeks to form a habit. For example, when you workout for three weeks straight it becomes easy to workout and it does become a habit. You find yourself trying to sneak in a workout every spare moment that you get. It seems like it is exactly the same when you change your diet. It takes a few weeks and then you do not think about the things you cannot eat, but the new variety of foods that you want to try. I think being vegan opens the door to a variety of foods that I have never experienced before. Being vegan also brings about exploration of different ways to prepare foods. I enjoy taking recipes that I used to use pre-vegan and make them vegan. I enjoy doing this, especially for desserts. There are so many experiments that I will be doing to convert my favorite cakes, cookies and pies to vegan recipes. I am sure some will turn out good and some bad. I think that is what makes it fun and challenging. So not that I am no longer doing the 21 day kickstart program, I will change the direction of this blog. I plan to still include recipes that I enjoy as well as those recipes that I create. I love watching Food Network, looking through food magazines, as well as cookbooks. I look forward to creating vegan recipes from these sources. I one day hope to organize all of the recipes I have created as well as those from magazines and newspapers.
