Olive Tapenade with Garlic Toast

Olive Tapenade

1/2 cup of Kalamata olives

1/2 cup of green olives

2 tbsps olive oil

2 cloves garlic

4 tbsps capers

1/4 cup sun dried tomatoes

1 tbsp fresh thyme

1/4 tsp black pepper

juice of 1 lemon

Combine all ingredients in food processor and process until coarsely chopped.

Serve on toast or crackers

Garlic Toast

1 baguette, thinly sliced

3 tbsps Earth Balance

1 clove garlic, minced

1 tsp parsley, minced

Let Earth Balance sit out 30 minutes or so until softened.  Add all ingredients and stir until well combined.  Spread on sliced baguette.  Bake in oven at 350 F for 20 minutes or until lightly browned.
