Apple Rhubarb Crisp

Apple Rhubarb Crisp

2 apples of your choice, peeled and coarsely chopped

3 small stalks of rhubarb, coarsely chopped

1/4 cup water

1/4 cup raw can sugar

1 tbsp cornstarch

1 tsp vanilla extract

1 tsp ground cinnamon

1 1/2 cups rolled oats

1/4 cup brown sugar

1/4 cup whole wheat pastry flour

1 stick of Earth Balance (use a small piece to coat the pie pan)

In a bowl, combine apples, rhubarb, water, sugar, cornstarch, vanilla and cinnamon.  Take a small piece off of the stick of Earth Balance to coat a deep dish pie pan.  Pour the mixture from the bowl into the pie pan. 

For crumb topping, combine oatmeal, brown sugar and pastry flour.  Cut in the Earth Balance using two knives or a pastry blender until you have coarse crumbs.  Sprinkle the mixture evenly over the top of the ingredients in the pie pan.  Cover with foil and bake at 375 F for 35-40 minutes.  Remove foil and bake an additional 10 minutes.
