Oatmeal Chocolate Chip Cookies

1 cup whole wheat pastry flour
1/2 cup unbleached flour
1 cup oatmeal, 1/2 tsp salt
1/2 tsp baking soda
1/2 cup vegan chocolate chips
1 tsp vanilla
3 Tbs canola oil
3/4 cup organic cane sugar
3/4 cup vanilla soy milk

In a large bowl, mix flours, oatmeal, salt, baking soda and sugar until blended well. Then add the rest of the ingredients and mix until wet ingredients are incorporated into the dry ingredients.

Heat oven to 350 degrees. Drop cookies by tablespoon onto a non stick cookie sheet that has been sprayed with non stick cooking spray. I like large cookies, but you can use a teaspoon instead of tablespoon for smaller cookies. Place cookies a couple of inches apart. Bake for approximately 20 minutes. This recipe makes approximately 16 large cookies.
