Peanut Butter Chocolate Chip Oatmeal Cookies
1/2 cup whole wheat pastry flour
1/2 cup peanut butter
¾ cup vegan brown sugar
½ cup Earth Balance, or other vegan butter softened
½ cup oatmeal
1 tsp baking soda
¼ tsp salt
3 Tbs canola oil
½ cup chocolate chips
Cream the brown sugar and Earth Balance. Add the canola oil and stir to combine. Next add the oatmeal, flour, baking soda and salt. Stir until well blended. Add the chocolate chips and stir just to incorporate.
Drop by teaspoon onto a non stick cookie sheet. Flatten each cookie with the back of a spoon. Bake at 350 degrees for approximately 15 minutes.
This recipe makes approximately 24 cookies.
