"Chicken" Korma

½ raw cashews
½ cup boiling water
3 Tbs coconut oil
1 medium onion, chopped
3 cloves garlic, minced
2 tsp fresh ginger, minced
2 Pkgs Gardein Chicken Fillets, chopped
1 tsp tumeric
1 tsp coriander
1 tsp chili powder
1 tsp cumin
1 tsp garam masala
½ tsp salt
1 can coconut milk

Put cashews and boiling water in a small bowl and set aside for 15 minutes. Put garlic and ginger in blender. Blend until smooth. Add cashews and water. Blend. Heat coconut oil in a heavy pot or large skillet. Saute onion until soft. Add tumeric, coriander, chili powder, cumin garam masala and salt. Stir until combined. Add Gardein and sauté until the Gardein is lightly browned. Add mixture from blender and coconut milk. Simmer, covered for approximately 15 minutes. Serve over rice.
