Vegan Potato Salad

Vegan Potato Salad

4 medium sized potatoes, cubed
1/4 cup onion, chopped
1 rib of celery, sliced
1 scallion, with some of the green included
1 tbs parsley
3/4-1 cup Nayonaise or Vegenaise
1 tbsp dill pickle relish
¼ tsp salt
1/8 tsp pepper
1/8 tsp celery salt

Put potatoes in a medium sized pot and cover with water. Put approximately 1 tsp salt in the pot. Bring to a boil. Boil potatoes for approximately 15-20 minutes, until tender. Drain and set aside to cool. In a small bowl, mix the Nayonaise, mustard, rice milk, salt pepper and celery salt until well blended. Once the potatoes have cooled, put them in a large bowl along with the onion, celery, scallion and parsley. Toss gently. Add the mixture that is in the small bowl to the potatoes. Stir gently and thoroughly. Cover and chill for about an hour.
